The best thing about making sausage at home is you can play with different recipes (one of my favorites is 75% beef, 25% pork), different seasonings and of course – to smoke or not to smoke.  If you go down this path to making sausages, there is a world of flavors to experience.  Most cultures around the world make sausage.  Enjoy these videos.
